Ingredients
1/2 cup water, boiling
1 cup pitted cherries, coarsley chopped
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 cup sugar
1/3 cup melted butter
2 eggs
1 tsp finely grated lemon zest
1/2 tsp almond extract (essence)
Method
Ok, found some use for these muffins and they actually taste really good. Unfortunately most sank to the middle or the bottom of the cake.
Preheat oven to 375 F. Butter your muffin tins
In a bowl pour the boiling water over the cherries. Let stand for 5 minutes.
In another bowl stir and toss together the flour, baking powder, baking soda and salt. Set asside.
To the cherries and water add the sugar, butter, eggs, lemon zest and almond extract. Add the combined dry ingredients and stir until blended.
Spoon in yhour muffin tins and bake for about 20 minutes. Enjoy!

Toss the well-drained cherries into some flour and they won't sink anymore.
if your cherries are ice cold they dont sink when the muffins are cooked.I kept my cherries( by accident ) in the coldest part of the fridge and this recipe worked fine everytime.When i used them from the cupboard they sank!
