This was invented to make my children eat spinaches along with their favorite meat and sauce.
Ingredients
2 Chiken Breasts
1/2 kg of spinaches
garlic clove
green and pink pepper
salt
white wine
bechamel sauce made with 1/2 spoon butter,1/2 half spoon flour ,half liter milk,salt ,nutmeg
Method
Cut two chicken breast in small bite sizes pices and fry them a little in a pan along with some pink and green pepper,sald,garlic clove and half a glass of white or rosee\' wine.Just cook them quickly to take a nice brown colour outside without burning them. Remove from pan. Boil the spinaches,take their water away by pressing them.Then
cut them finely and put them in the pan were you had previously cooked the spinaches,adding another garlic glove and salt. When they are ready,remove from pan and put in an ovenproof dish.Put on top of the spinaches,the chicken breasts pieces and cover with plenty of bechamel sauce. Put in the oven for 15 minutes at 200 degrees until the top is brownish.

We found it too rich and too heavy. Not suited to Sydney except in depths of Winter.
On second cooking, I added freshly ground nutmeg-always goes well with spinach.
