2. Gentle fry the garlic in some olive oil for 1 min. Then add the chopped tomatoes, Cumin, Corriander and beer. Season with salt and pepper then reduce heat and simmer for 30mins or until sauce has reduced and is nice and thick.
3. Fry the chicken in a frying pan in a little more olive oil for 3-4 mins. Add the pepper and onion and fry for another 3 mins or until chicken is cooked.
4. Add the sauce to the pan with the chicken and stir the the chopped fresh corriander.
5. Serve with warmed tortillas, Jalapenos and Sour Cream
