  • For the Chicken:
  • 4 Chicken Breats
  • 1 Red pepper
  • 1 Yellow pepper
  • 1 Red onion
  • 1 tbsp Cumin
  • 1 tsp Cinnimon
  • 1 tbsp Cayneen Pepper
  • 1 tbsp Dried Oregano
  • Juice of 1 lime
  • For the sauce:
  • 2 Cloves garlic
  • 1 Dried chipotle chilli, soaked in almost boiling water for 30 mins then chopped (use a standard dried chilli if unavailable, no need to soak)
  • 1 can chopped tomatoes
  • 1/2 bottle of mexican beer (I use Sol)
  • Salt & pepper
  • 1 tbsp Cumin
  • 1 tsp Corriander
  • To serve
  • Floor tortillas
  • Jalapenos
  • Sour Cream
  • Chopped fresh corriander
1. Cut the chicken into strips and add the spices, herbs and lime jucie. Leave to marrinade for 1-2 hours.

2. Gentle fry the garlic in some olive oil for 1 min. Then add the chopped tomatoes, Cumin, Corriander and beer. Season with salt and pepper then reduce heat and simmer for 30mins or until sauce has reduced and is nice and thick.

3. Fry the chicken in a frying pan in a little more olive oil for 3-4 mins. Add the pepper and onion and fry for another 3 mins or until chicken is cooked.

4. Add the sauce to the pan with the chicken and stir the the chopped fresh corriander.

5. Serve with warmed tortillas, Jalapenos and Sour Cream

Spicy mexican chicken Fajita's

Method
