Serves - 2 - 4 People
Prepreation Time - 2hrs 20mins
Cooking Time - 45 - 55mins
8 Chicken Legs
Packet of ready cut Mushrooms
4 Gloves fresh Garlic
1 Chicken Oxo Cube
1 Tin of Tomatoes
DRIED HERB \\\'N\\\' SPICES:-
All Purpose Seasoning
Cut Onions and Garlic into small pieces
Put into large mixing bowl. Add knob of butter, 2tblsp Olive Oil and mix together well then add all dried seasonings and mix together - This is marinade for the chicken.
Skin and wash the chicken legs then roll in marinade untill all chicken legs are covered.
Cover with clingfilm and place in bottom shelve of fridge for 2 hours (for best results marinade overnight) After 2 hours take chicken out. Heat up 1tblsp Olive Oil in large pot. Add onions/garlic and chicken cook on medium heat for 10 minutes. Take chicken out of pot and place into a pre-heated frying pan and continue to cook on medium heat. Put the packet of washed mushrooms (can cut in half if you wish) into large pot and cook for 10 minutes then add the tin of tomatoes - Add boiling water if necessary to create desired sauce thickness
After 5 minutes more place all chicken pieces into large pot and simmer for 20-30 minutes add more herbs/spices if desired.
Best Served with Rice.
