Chicken Piccata

Chicken Piccata

Ingredients
SERVES 2
2 chicken breasts, pounded thin
seasoned flour
2 tbsp olive oil
200ml white wine
juice of half a lemon
1 tbsp capers
knob of butter

Method
1. Roll the chicken breasts in the seasoned flour until lightly coated all over. Heat the olive oil in a frying pan and then add the chicken breasts. Cook for 2-3 minutes each side, until cooked through. Remove and keep warm.
2. Pour away any excess oil from the frying pan and then pour in the wine and lemon juice. Add the capers and then cook until the sauce is reduced by about half. Take off the heat and then whisk in the knob of butter.
3. To serve, spoon the caper sauce over the chicken breasts.
