Roast chicken in a covered roaster, the heavier the roaster the better! I like 325 c for 4 hours or so as my chickens tend to be very large and big breasted Breast down if you prefer Add all seasonings to taste When done, mix your dumpling batter with a LIGHT hand to resemble a wet biscuit dough. Fill roaster with extra stock to about 1/3 full. Bring to a gentle boil and add mounds of dumplings into it. turn down to simmer and cover cooking gently turning once if neede after about 5 minutes. Keep cover on. Check to ensure fluffed cooking all the way through. Serve with chicken and extra veggies My crew likes traditional peas (from the garden) rolling around on the plate in the dumplings self made gravy :)
