Ingredients
* 1 pound boneless chicken breast
* 1 tablespoon dark soy sauce
* 1 tablespoon all-purpose flour
* 2 tablespoons cooking oil
* 2 tablespoons green curry paste
* 2 green onions with tops, chopped
* 3 cloves garlic, peeled and chopped
* 1 teaspoon fresh ginger, peeled and finely chopped
* 2 cups coconut milk
* 1 tablespoon dark soy sauce
* 2 tablespoons white sugar
* 1/2 cup cilantro leaves, for garnish
Method
1. Cut into 1 inch cubes then toss chicken first in 1 tablespoon dark soy sauce,
2. then in the flour, coating pieces evenly.
3. Heat the oil in a large skillet over medium high heat. Place chicken in the skillet,
4. cook and stir chicken until browned, about 5 minutes. Remove chicken.
5. Reduce heat to medium and stir in curry paste. Cook for 1 minute until fragrant,
6. then stir in green onions, garlic, and ginger; cook an additional 2 minutes.
7. Return chicken to the skillet, stirring to coat with the curry mixture.
8. Stir the coconut milk, 1 tablespoon soy sauce, and sugar into the chicken-curry mixture.
9. Allow to simmer over medium heat for 20 minutes until the chicken is tender.
10. Serve garnished with cilantro leaves.

Beware your curry paste quantities if using authentic thai paste rather than supermarket brands...2 tablespoons burned burned burned...
AMAZING recipe! My husband is American and he opted for chips and burger with a ton of tomato sauce.. my daughter and I had the curry... shes 4 and LOVED it.. :)
Just made this and it is just fab.... put some mango chutney in with the paste and just lovely...<br />
A very clean and enjoyble curry.
I made this recipe and the family loved it. However, i didnt like the coconut milk.....is there an alternative.
I can only find Thai green paste, where green curry paste ?

Love this recipe for chicken curry. I made it for the first time for new year 2010 for 20 guest (adult and children). Everyone loved it, most having seconds. I served the curry in bowls with naan bread.

My wife attempted this recipe Jamie,she didnt get it right she never took the chicken out before making the past which left it very watery there was some tears plus a fish supper disaster

it is so much better version of Chicken Curry then all others recipes I so far had seeing on line. The best think about it is that my children mind like to eat it, as it doesn't seem to be to spicy. Fingers cross :)
