Ingredients
2 serves
2 chicken breasts
120 grms home made pasta
FOR THE SAUCE
2 tomatoes(peeled and chopped)
1 green (sweet) pepper chopped in pieces
1 clove of garlic
1 onion peeled and chopped
3 big leaves of basil
thyme
1 tea sp salt
1/4 tea sp pepper
1/4 tea sp sugar
1/2 cup olive oil
Method
Ask your butcher to flatten the breasts....if he dont do it!!!.....do it yourself..... its easy to do it, with a sharp knife.
Season(salt and pepper) the breasts and keep them, aside.
In a casserole with boiling water, add salt, and cook the pasta for 8 minutes. Drain the pasta and keep it aside.
Put the onion ,garlic,green pepper and herbs in a pan. Saute them for 5 minutes and add the tomatoes,the salt ,sugar and pepper. Cook for 10 minutes and then add 2 glasses of water. Set the temperature in low mode. While the sauce is being cooked,in a grill pan, place the fillets, and cooked them from both sides for 15 minutes.Then
pick the fillets from the grill pan, put them in the pan with the sauce, and let them cooked for another ten minutes(in low fire).After 10 minutes pick them out of the pan and keep them aside(the fillets are now ready).Now put the pasta in the pan with the sauce and cook it for 5 minutes,mixing gently the sauce with the pasta. This will give an extra taste to the pasta.
Now the dish is ready to be served....hope you enjoy it!!!
