1. First make the sauce. Chop the garlic and onion and cook with the thyme in 2 tbsp of olive oil over a gentle heat until the onion is soft and transparent. Pour in the chopped tomatoes, the chilli flakes, oregano and sugar. Season with salt and pepper and simmer for 20 minutes until the sauce thickens. 2. Preheat oven to 180C. Pour 1 tbsp of olive oil into a frying or saute pan, Heat over a moderate/high heat and add the chicken pieces. Brown the chicken pieces all over. 3. Place the browned chicken pieces into a shallow ovenproof dish and pour over the sauce. Cover and cook in the oven for 40 minutes. Serve.
