200 g chicken liver
a handful of mint leaf
1 apple sliced
50g brown sugar
2 tsp extra virgin oliva oil
1 tsp butter
salt and pepper
1 shot cognac
300 g potatoes
1 tbsp butter
1 tbsp milk
For side make a mashed potatoes, mixed with butter, milk and salt.
Heat a pan with oliva oil and butter, fried chicken liver.
In same time with chicken liver in another pan melt the sugar and add slice of apple.
When the liver is medium cook add cognac to sterilize in flame and add little chicken stock, mint leaf finelly chopped and season with salt and pepper.
Serve with mashed potatoes and caramelized apple.
