Chicken pie

its an easy way to make a tasty traditional pie

Ingredients
4 serves
2 chicken breasts(boiled and chopped)
10 small size mushrooms chopped
1 red pepper chopped
80 grms leek /chopped
1 big onion /peeled and chopped
1 1/2 tea sp salt
¼ tea sp pepper
1 tea sp sugar
½ glass red wine
½ cup olive oil
150 grms yellow cheese(cut it in small cubes)

Method
The first thing you have to do, is to cook/boil in salted water the breasts of the chicken. Boil them for 40 minutes , let them cool and chop them in small pieces.
Put onion ,leek ,pepper and mushrooms in a frying pan (big enough) and cook them until their liquids will be absorbed. Mix them well, using a wooden spoon and add salt ,pepper and sugar.
Then add the olive oil and cook in slow fire. The mixture of the “veggies” must be cooked well, before you add the chicken breasts.
Add the chopped chicken breasts, in the frying pan and mix with the other ingredients.
Braise for 20 minutes in a very slow fire. After this the filling of the pies, will be ready. Set it aside, away from the fire. When filling the phyllo the mixture must be cool .
Place a phyllo or two (depends on how “fat” you prefer your pies be) in a clean and flat surface (a table or your kitchen ramp) and apply on it, some olive oil with a cooking brush. Then with a spoon, place the mixture on the phyllo along its bigger side. On top of the mixture place the cheese cubes (about 4-5 in every pie). Roll the phyllo closing the mixture inside. Round carefully the roll and make a kind of “snail” shape, pie, and put it, on a baking pan, that you fist have applied, olive oil on its surface( not to much).
Bake the pies in a preheated oven for 5 minutes in high temperature and then till its color turned brownish in slow fire (about 15 minutes or less, depends on the oven).
Don’t forget to apply before you put them in the oven some olive oil, with the brush, on top of the pies. This will give them a nice color.
