Ingredients
Makes 4 serves
8 chicken thighs(remove the skin)
16 medium size mushrooms(portobellos)
4 green sweet peppers
1 big dry onion (peeled and chopped)
half of a handful of fresh basil, fresh oregano and thyme
1/8 glass of a spirit(I use a Greek traditional one called tsipouro that I have flavored it for a year with pomegranate seeds….you can use any spirit you like, the same portion)
Salt , pepper and sugar(the portion in salt and pepper depends on you,1 tea sp of sugar)
2 matured fresh tomatoes(pass them from α blender)
1 cup extra virgin olive oil(evoo)
Method
Wash and salt the thighs…care to remove first the skin, Removing the skin makes the dish more healthy.
In a pan heat olive oil, and add the chopped mushrooms, peppers and herbs.
Sauté them .
Once the onion turned its color to light gold, add the parts of the chicken, and cook them slowly for 8-10 minutes.
Now add the spirit and let give its flavor to the food.
Add salt ,pepper and sugar and the tomato pulp.
Cook for 5 minutes and then add 2 glasses of water. Slow cook for 30 minutes…….When the sauce thicken the food is ready. I usually serve it with white jasmine rice……….
