I can not admit that I love Indian food, I think food is the most aromatic in the world and I think that\'s why I love...
Ingredients
one chicken boneless breast, finely sliced
one onion, finely sliced
1 tbsp fresh ginger, finely cgopped
chili, finely sliced
2-3 cloves garlic, finely chopped
1 tsp turmeric
1 tsp curry
1/2 tsp cayenne powder
1 1/2 tsp garam masala
1/2 tsp coriander seeds
1 1/2 tsp brown sugar
250g tinned chopped tomatoes
150 ml natural yoghurt
vegetal oil
sea salt & fresh ground black pepper
a good handful of fresh coriander leaf, finely chopped
for rice
one cup of basmati rice
sea salt and fresh ground white pepper
Method
Place the rice in a pot, add 1 1/2 cup water, season with sea salt and fresh ground white pepper. Cover with a lid and cook for aboute 8-10 minutes on high heat, then remove from heat. Take the lid off the pot, covering it with absorbent paper and then lid and let to rest for 10 minutes. Remaining water or steam will be absorbed by paper.
Heat a pan with vegetable oil, add onion and coriander seeds. Cook for a few minutes then add ginger, garlic and chili. Cook for 2 minutes, then add sugar, curry powder, garam masala, cayenne pepper, turmeric. Stir for 2 minutes then add tomatoes. Cook all together for a few minutes.
Place the sauce in a food processor and blend.
In same pan add vegetable oil, heat and add chicken breast and fried until is brown. Cover chicken breast with sauce, season if is necessary with sea salt and fresh ground black pepper,then let to cook for about 5 minutes.
In finaly, stir yoghurt and coriander leaf and serve with a good portion of rice.
