Chicory/Endive fruit salad/starter

This is a great fresh summery starter, also great if your menu is on a budget....... any left over fruit slad without dressing can be used up for \"munchies\" with a bit of organic yougurt and oats.
3 slices of pineapple
1 medium pear
table spoon of good mustard
tablespoon of honey
table spoon of olive oil
gorgonzola (or cheese of your preference)
Dice all the fruit and sert aside (don\'t peel the apple and pear, they will add more colour and crunch)
Wash the chicory/endive and separate the leaves, drying them well.
Place the endive on a large platter forming little boats with the leaves.
place a tablespoon diced fruit salad on each leaf.
mix the mustard, honey, olive oil salt and pepper in a bowl and drizzle over the endive and fruit salad...
top each leaf with a knob of gorgonzola.
Great mix of sweet and savoury tastes but fresh and juicy.
