THE ULTIMATE SPICY BURGER WITH DJ BBQ

500g beef mince
2 scotch bonnets, finely chopped
150g blue cheese
8 rashers high welfare smoked streaky bacon
2 large ripe tomatoes, sliced
4 burger buns
Put your mince and your chillies into a bowl and mix thoroughly together. You may need to wear gloves as the chillies can make your hands tingle slightly. Mix into 3 or 4 burgers (depending on how big you like them), season both sides with plenty of sea salt and pepper and set aside.
Making sure you have a build up of coals on one side of your barbecue and not so much on the other put your burgers in the middle and cook on each side for around 4-5 minutes. Meanwhile, lay your bacon next to the burgers and cook for a couple of minutes until crisp then remove with tongs and set aside. When your burgers are 30 seconds or so away from ready, crumble the cheese over each burger, put the barbeque lid on and allow to melt over the top.
Remove and set aside then quickly toast your buns for 30 seconds on the bbq. Fill your bun with a spicy burger, top with a slice of tomato and a couple of rashers of bacon, finish with ketchup (or not).
