Note: A small amount of the sauce goes a long way on your desired meat or fish.
Add the tomato paste, sugar, vinegar, salt and pepper and simmer for ten to fifteen minutes stirring from time to time to avoid catching.
Take off the heat and add the corriander and mint, before blitzing into a smooth sauce with either a stick blender or food processor
