Here is a very versatile sauce that can be added to many things including bbq meats, fresh fish(especially tuna) and chicken. The sauce is quite subtle even though it is a chilli sauce with a lovely sweet and sour taste before the chilli kicks at the back. Note: A small amount of the sauce goes a long way on your desired meat or fish.
Ingredients
4 Garlic Cloves
Handful Of Cherry Tomatoes
Half A Jar Of Roasted Peppers
4 Fresh Red Chillis
1 Tsp Of Tomato Paste
2 Tsp Of Sugar
2 Tsp Of Vinegar (Sherry Vinegar Best)
Small Handful Of Corriander
Small Handful Of Mint
Salt And Pepper
Method
Roughly chop the garlic, tomatoes, peppers and chillis and fry off in a nice amount of olive oil for a couple of minutes.
Add the tomato paste, sugar, vinegar, salt and pepper and simmer for ten to fifteen minutes stirring from time to time to avoid catching.
Take off the heat and add the corriander and mint, before blitzing into a smooth sauce with either a stick blender or food processor
