Spicy chicken with chilli and tomato marinade.
2 noē 8 chickens cut into halves.
1 red onion finely chopped.
2 cloves garlic finely chopped.
2 - 3 Thai chillies finely chopped.
2 sprigs Rosemary.
1 handful basil leaves.
Ĺ teaspoon Chinese Five Spice.
1 tin of Italian tomatoes,
Salt and pepper.
Ĺ teaspoon smoked paprika.
Mix together all ingredients, except chicken and place in a roasting dish.
Add chicken, cover and marinade, for 2 hours, turning to coat chicken occasionally.
Cook in preheated oven @ 180 degrees C for an hour or until chicken is tender.
Baste chicken whilst cooking to keep moist.
Serve with carrot and spinach mash and baked potato scallops.
Spoon some of the remaining marinade over the chicken to serve.
