Don't know why I have never thought about cooking chips like this before now !!
First you get a baking potato and cook it whole , in the microwave, in its skin ,till its about 95% cooked.
Whilst the potato is 'microwave baking' get a deep sided frying pan and put about 3/4 to 1 inch of oil into it and put it onto the heat to get hot.
Get the potato out of the microwave and strait away chop it into large chunky chips , add these immediately to the hot oil.
So the potatoes are hot when they go into the hot oil and as a result , they take only a few moments to brown.
Because they cut sides of the hot potato 'seal' in the oil very fast , the chips do not absorb much oil at all .
Also the skins on the potato give these chips a lovely flavor.
