Ingredients
Very simple and quick.
125g butter
175 g dark cooking chocolate
3 eggs
3/4 cup fresh breadcrumbs (I whizz up a few slices of white bread, stale is fine)
1/2 cup ground almonds
4 tablespoons caster sugar
icing sugar to dust the top
Method

. Set oven temperature of 180 o C
. Line 20cm cake tin with paper and sprinkle with some of the ground almonds
. Place butter and chocolate in saucepan and melt together on low heat, stirring constantly
. Separate yolks from whites and beat whites until stiff but not dry
. Combine breadcrumbs, 1/3 cup ground almonds and sigar together and add to melted chocolate mixture
. Add yolks one at a time, stirring constantly
. Fold in egg whites until combined
. Pour into cake tin and bake for 25 minutes (this cake is supposed to be a little moist in the centre)
. Finally, just dust with icing sugar
(You can also make a raspberry coulis to dress it up if you like. Frozen raspberries with a large tablespoon of caster sugar, just melted in saucepan and cooled.)

if you are going to be using breadcrumbs you may as well use flour, no?
