Chocolate coconut slice (gluten free version of a Donna Hay recipe)

This is a Donna Hay recipe that I cut out of a newspaper supplement some time ago. I\'ve replaced the plain flour in the recipe with gluten free plain flour and it works well.

Ingredients
1 cup plain gluten free flour mix (I used white wings brand - probably only available in australia)
2 tablespoons cocoa powder (make sure this is gluten free)
2/3 cup brown sugar
1 cup desiccated coconut
185g butter, melted
1 egg, lightly beaten

Icing:
1.5 cups icing sugar (make sure this is gluten free)
2 tablespoons cocoa powder (make sure this is gluten free)
40g butter, melted
1.5 tablespoons boiling water

Method
Preheat oven to 180C.
Combine all slice ingredients and press into a greased and lined 23cm square tin (I used a rectangular slice pan and it was fine).
Bake for 20 minutes.
Allow to cool in tin.
Mix icing ingredients together and spread over slice. Refrigerate for 30 minutes.
Remove from tin and slice.

Made this for a picnic as my friend is gluten intolerant. No one would have known it had gluten free flour. Delicious.

It's just a commerically bought mixture that I get in the supermarket. They are usually<br /> white and a mix of rice/corn/tapioca/potato flours with xanthan or guar gum. You<br /> can make up your own but I find it easier to grab one of the shelf.

Is Gluten Free Flour Mix just a white gluten free flour or does it have something added? Caroline

Passionfruit slice version
leave out cocoa
replace coconut (or most of it) with almond meal
replace water in icing with passionfruit pulp
