Ingredients
100 g chocolate 70% cacao
150 ml milk
50 ml whipped cream
30 g corn flour
a pinch of salt
4 egg yolks
4 egg whites
150 g icing sugar
1 tsp unsalted butter
1 tsp cognac
Method
Preheat oven at 200\'C.
Put milk, whipped cream and corn flour on pot to the medium heat. Stir all time until start to be warm, then take off. Add chocolate to melt.
Beat egg yolks, using an electric whisk till is foam, then add gently to milk and cognac too.
Beat egg whites with pinch of salt until you have soft peak then add sugar and beat until the whites are very stiff. Add to the cream and mix gently.
Grease your ramekins with butter and dusty with some chocolate.
Baking at oven about 10 minutes.
Behind to serve dusty chocolate souffle with icing sugar.
