Christmas Cookies

A couple of weeks back we made some delicious cookies, Christmas style. We added the raisins to imitate mince pies, and the cranberries just because we had a surplus. The end product tastes really spicy, almost like gingerbread, but the sultana\'s and cranberries match with the spice really well.

Ingredients
-100g of butter
-75g of caster sugar OR 100g of light brown sugar
-1 egg
-1 tsp of cinnamon
-1 pinch of ground cloves
-1 pinch of ground cardamon
-1 tsp of ground ginger
-1 pinch of black pepper
- lemon zest, to taste
-cranberries, to taste
-sultanas, to taste
-200g of plain flour
-1 and a half tsp of bicarbonate of soda

Method
1) Cream the butter with the sugar.
2) Add one egg, and mix
3) Add the spices, lemon zest, cranberries and sultanas
4)Make the mixture into a dough, by adding the plain flour and the bicarbonate of soda.
6)Then separate the dough into several cookie sized pieces, and bake in the oven for 10 minutes at 180 degrees centigrade.
