Christmas Mincemeat muffins

Incredibly quick and simple to make, these are great during the festive period and a great place to add the leftover mincemeat!

Ingredients
2 cups self raising flour

1 tsp baking powder

1 tsp pumpkin spice

1/2 cup light brown sugar

1 cup fruit mincemeat

1 egg

1/2 melted butter

3/4 cup buttermilk

1 tbsp milk

2 tsp demerera sugar

Method
Preheat oven to 400F

In a bowl mix all the dry ingredients together.

In a separate bowl mix together the rest of the wet ingredients (mincemeat, egg, butter, buttermilk, milk)

Add the wet ingredients to the dry and briefly mix until just combined.

Spoon your batter into your prepared tin. Sprinkle some demerera sugar on the tops. Bake for 18-20 minutes

Jamie is about as English as they come. yet this is an all-American recipe! <br /> Can we have an English translation please? <br /> We use ounces/fluid ounces or grams/ml. What is a 'cup' - my cups come is all sizes!<br /> My cooker (like all English ones these days) also only shows Celsius temperatures.

Can you clarify? <br /> 1/2...of what?...melted butter...cup? teaspoon? tablespoon?<br /> Any substitute for pumpkin spice?...allspice? cinnamon?<br /> How much should I fill a muffin case to ensure these will not overflow?<br /> Thanks

How many muffins does this recipe make? Are they the large ones or small cupcake size? My guess is the latter.

BRILLIANT! Made these and substituted the regular flour for Pamela's Gluten Free Baking and Pankcake Mix for AWESOME Gluten Free muffins for my beautiful bride.
EXCELLENT :-)
