Christmas Recipe: Crown Roast With Pistachio And Apple Stuffing

Christmas 2012 Dinner Recipe Idea: This a simple-to-cook recipe idea for Roasted Turkey that will rock your Christmas.
2.7kg/6lb Turkey Crown Roasting Joint
1 red onion peeled and finly sliced
1 leek trimmed and finly sliced
1 red skinned apple cored and grated
1tsp dried thyme
50g/2oz pistachio nuts shelled and chopped
250g/9oz fresh breadcrumbs
2 eggs beaten
salt and black pepper
Preheat oven to 190c/375f/gas 5
Place Turkey in roasting tin and roast in oven for approx 2 hours basting every 20 minutes.
Meanwhile make the sauce.
Heat the butter in a saucepan and fry the onion and leek until softened. Stir in grated apple and thyme and cook for 1minute.
remove from heat, transfer to bowl and stir in nuts, breadcrumbs, eggs and seasoning.
Allow to cool then roll into small balls and place in single layer in ovenproof dish.
When turkey has been roasting for 2 hours, place stuffing balls in the oven on the shelf below the turkey and cook for 30 minutes. Test if turkey is cooked by piercing the thickest part of the breast with a skewer- the juices should run clear.
Serve with vegetables,roast potatoes, gravy and cranberry sauce.
