I don\'t actually cook the oatmeal in this recipe. I soak it overnight (with the milk,coconut and a sprinkling of vanilla sugar) and just warm it up a little in the microwave the next morning. This method produces a lovely creamy porridge with lots of flavour but if you prefer, just cook your oats the usual way.
Ingredients
Makes 1 large serving
1 teacup of rolled oats
2 teacups soya milk, nut milk or cow\'s milk
1 handful of ripe strawberries
1.5 tbsp dessicated coconut
Some bourbon vanilla sugar
1 tbsp almond slivers
Agave syrup or honey to sweeten
Method
1. Prepare the oatmeal as above.
2. Wash and slice the strawberries (reserve 1 or 2 strawberries for decorating).
3. Crush the strawberries with a fork, adding a little agave syrup or runny honey, till you end up with a thick puree.
4. Serve the oats with the puree, strawberry slices, almond slivers and an extra sprinkling of coconut.
