A Coconut lover\'s delight!

Ingredients
1 egg white
1 yolk
55g icing sugar
120g unsweetened coconut, grated (pre-packaged type)

Method
Preheat oven to 300F
Cream egg yolk with sugar. Add coconut.
In another bowl whisk the egg white until white and fluffy. Add that to the coconut mixture.
Drop mixture onto cookie sheet and bake for 15 minutes. Then LOWER the heat to 250F and bake for another 30 minutes until golden in color.
