makes 4 serves
2 cod fishes(about 1 kgr)
4 medium size potatoes ,peeled and chopped in small size cuts
2 carrots, peeled and chopped(medium size cuts)
a handful of celery
2 green sweet peppers chopped
1/2 cup EVOO
1/2 glass of white dry wine
1/2 glass water
Pick 2 fresh cod fishes, from your fish monger.
Remove the scales and the offal. Wash and salt them.
Put them in a baking pan and add potatoes and carrots.Care to place potaoes around the fishes and not above or under them.Add celery on top.
Add lemon juice and wine and a 1/2 glass of water. Add salt and pepper and in the end add olive oil. Care to add the ingredients as i described above,using the same order.
Bake using medium temperature oven, for 60 minutes or less(depends on potatoes) .
