Colourful ricotto salad

Olive oil to fry and marinade
1 Yellow and 2 green zucchini/squash
400 gram carrots (preferably yellow, purple and orange carrots), shredded
12 pieces of sun-dried tomatoes, cut in small pieces
100 gram celery root, shredded
Mixed herbs (ruccola, basilÖ )
250 gram ricotta
Salt and pepper to season with
Chop the yellow zucchini into 4 round pieces (about 1 inch/2,5 cm/piece), chop the green ones into 8 pieces. Grill the pieces in your pan until crispy and brown. Season with salt and pepper.
Peel and shred the carrots and celery root, marinade in olive oil and season with salt and pepper.
Cut the sun-dried tomatoes in small pieces (diced is adviced ), mix together with the ricotta and use as decoration for your zucchini/squash-pieces (a tablespoon for each zucchini-piece should be enough).
Serve together with your mixed herbs.
