Compote de pommes ! (Apple compote)

Ingredients
For 1 person:

- 3 apples
- 2 table spoons of oat
- 1 table spoon of honey
- sugar
- cinnamon

Another really easy recipe! =D I "invented" it, drawing on some ideas of recipes I'd read in books. When I was a kid, I've always seen my Mum cooking compote with apples which were too ripe and didn't taste really good any more. And it was always delicious !! And then I came across this recipe of baked apples, p 343 of Jamie's Ministry of Food (ok, it's almonds he uses, but it made me think of porridge oats). And then I live with my friend Bridget who LOVES everything Greek, including honey. So there came the idea for this recipe!

Peel the apples, take of the core and chop them into small bits (half a quarter should be the good size). Put everything in a pan with 1 small glass of water (ca. 200 ml). Use a medium fire (you don't want it to burn ;) ). Allow the apples to slowly cook,(cover if it's becoming too cry, uncover if it's too soaked ^^). When they're soft and melting, (by then there shouldn't be more than 1-2 table spoon of water in the pan). Pour them into a cup, and with a fork, mash them. Season with sugar and cinnamon, at will ! Leave them to cool down a bit.
In the meanwhile, take a baking tray, or a roasting tray.. Basically anything with a large flat bottom which can go into the oven! Pour some porridge oats on it, spread them out, and put into the oven, to grill. Grill for approximately 5 minutes, until they're crispy (but not burnt !). And when they're done, sprinkle them on the compote.
And nooooow, to finish! With a spoon, add honey on top, dropping it artistically on the oats !!! I can assure you, it's gonna make a very beautiful dessert !!! ( I MUST take a photograph next time !!)

It should take you approximatively 15 minutes to make, it's cheap and SO gorgeous !!! =D

Dear Jamie,

I watch all your recipes on TV, BBC Food, and I just love it, all your techniques and the way youi show how to cook any thing is just gorgeous and you one of the best Chef, and one of the best teacher as far as nice cuisine is concerned.
