Corn Chowder

Corn Chowder

My mom got the original from her neighbor from Wales but I thought it needed more cheese and bacon. (Chowder w/o bacon=travesty)

Ingredients
1/2 pound good smokey bacon

3 celery stalks, chopped

1 large onion, chopped

1 large carrot, chopped

2 cups chicken stock

2 potatoes, cubed

salt

pepper

2 cups corn, fresh is best

1/2 cup butter

1/2 cup flour

3 cups milk

1 lb sharp cheddar cheese

Method
Chop bacon and brown in a large pot. Add chopped vegetables and saute until tender.
Add stock and heat to simmering. Add potatoes and cook until tender then add corn. Add seasonings to taste.
In a separate pot, make a roux with the butter and flour and add milk cooking until thickened. Add grated cheese to this and stir until melted. Add cheese sauce to vegetables and stir to combine heating through. Correct for seasoning.
