Ingredients
1 kg of Beef.
500 g of Potatoes.
Cauliflowers 200 g.
200 g broccoli Sprouts.
200 g Brussels Sprouts.
200 g pumpkin Flesh.
150 g green Beans.
2 carrots
3 stalk celery
1 onion
Mustard grained (Bavarian) 150 g.
350 g chopped Tomatoes.
Garlic 8 toothpicks.
Salt, pepper, rosemary,root parsley.
Method
Cook a strong meat broth. One kilogram of meat – 1 ½ liter of water, salt, pepper, rosemary branch, onion, carrot, parsley root. Cook after boiling about 1 hour. Remove meat, brothpass through a sieve and add boiling water to 2 ½ litre and put on a medium flame.
While boiling broth, prepare vegetables. Peel the potatoes and cut into large cubes. Parse the cauliflower and broccoli on clusters, large cut in halves. Pumpkin cut into large cubes, carrot thick circles. Brussels cabbage cut in half, onions, celery stalks large cubes.
The broth, alternately add vegetables. First, potatoes, carrots and celery, 5-7 minutes with all the cabbage and beans, even after 10 minutes, the pumpkins and onion. Until the vegetables cook, parse meat and cut it to medium pieces and add to the soup with chopped tomatoes. Cook for 10 minutes, then add the chopped garlic and mustard. Mix thoroughly, and decrease the fire at a minimum, cover and simmer for 15-20 minutes. Then remove from heat and let is half an hour. Serve with sour cream and fresh coriander or parsley.
