  • 125g Salted Pork flank (Cured skin on pork belly)
  • 1 tbsp butter
  • 5 cups chicken stock
  • 1 1/2 cups potatoes, cut into dices
  • 2 garlic cloves, minced
  • 2 cups Kale, chopped
  • 1 cup sorrel (about 20 leaves, 10 if big leaves)
Put pork flan into cold water, leave to boil remove from heat and drain.

Ina big pot melt butter and add you pork, brown it. Add the broth and potatoes and bring to a boil. Salt & pepper. Reduce to a simmer for 15 minutes.
Add garlic and Kale and cook for another 7 minutes or until kale is soft
Add Sorrel and cook for another 2 minutes. Rectifie seasoning.

Great soup with lots of flavour. Freezes well too!

Method
