Courgette and Tomatoe Soup - makes 4 portions

This soup is very quick and easy to make, especially if you have the ingredients in your garden. It is lovely served with fresh wholemeal bread. The soup freezes well.

Ingredients
1 oz butter
1lb courgettes chopped or sliced thinly
1 small/medium onion chopped
1lb tomatoes skinned and chopped
1tbsp flour (can use plain wholemeal)
1 pint chicken stock
1/4 tsp tumeric
seasoning to taste

Method
1.Melt butter in large saucepan and gently cook courgettes and onion for 5 mins, shaking pan occasionally
2.Add tomatoes, flour and tumeric and continue cooking for few mins
3. Add the stock, stir well and slowly bring to boil
4. Lower heat and simmer gently for about 20 mins
5. Blend until smooth, reheat and serve adding salt and pepper to taste.

Tried this a couple of time now and it is absolutely amazing! I also add a pepper and a chile (finely chopped) for bit of a kick!!!

For your American readers, you need to point out that a "courgette" is what we call "zucchini."
