Ingredients
Makes 1 large salad bowl
3 cups cooked couscous (use stock as it adds more flavour)
1 small onion, finely chopped
2 cloves of garlic, crushed
1/2 large cucumber, finely chopped
approx 10 baby vine tomatoes, chopped
1 large bunch of parsley, finely chopped
1 large bunch of coriander, finely chopped
about 20 mint leaves, finely chopped
200ml yoghurt
about 4 tbsp olive oil
2 tbsp harissa
2 tsps chilli flakes (optional)
Juice from one large lemon
Salt and pepper to season
Method
1. Place the cooked and cooled couscous in a large bowl.
2. Make a dressing using the yoghurt, olive oil, lemon juice, harissa and garlic cloves. Pour over the couscous.
3. Add the rest of the ingredients to the bowl and using 2 tablespoons, toss the salad, mixing well.
4. Allow to marinade for at least 1 hour before serving.

I must have made this a dozen times now. The family insist that I arrive with it to all family functions as it's a massive crowd pleaser. Do it.
Wow, this salad is fantastic with morroccan kebabs on a BBQ. We live in the middle east and surrounded by this food daily, and this is more authentic and tasty than 99.9% of the food here. You must try this!
