A simple and spicy couscous salad ,lovely served with some grilled chicken or garlic & chilli pan fried prawns.
Serves 2 (side dish)
1 small red pepper (Hungarian),finely chopped
1 heaped cup of cooked couscous
1 red chilli, finely chopped
1 clove of garlic, crushed
1 bunch of parsley, chopped
1-2 tsps of harissa
3 tbsps of extra virgin olive oil
Juice of 1 small lemon
Stuffed chillis to serve (optional)
1. First, prepare the dressing. Mix together the olive oil, lemon juice, garlic and harissa. Season with some salt and black pepper.
2. Place all of the salad ingredients in a small serving bowl and pour over the prepared dressing, mixing well.
3. Cover, then place in the fridge for at least 30mins to allow flavours to blend.
