Cranberry chutney

Cranberry chutney

A chutney that is perfect with chicken or turkey.

Ingredients
300 ml cranberries
200 g mango, chopped in minor pieces
1 shallot, chopped
150-200 ml brown granulated sugar
30 ml apple vinegar
Some bits of a cinnamon stick
1 tbsp curry
a pinch of salt
nigella seeds

Method
1. Heat up some oil in a saucepan. Add the shallot and stir until it softens.

2. Add the spices (curry, nigella seeds and cinnamon), the brown sugar and the vinegar. Let it come to a boil and add the mango. Also, add some salt.

3. Let it all simmer for quite long, perhaps 30-40 minutes, until the mango is so soft that it is easy to mash and they chutney has thickened.

4. Then, add the cranberries and let the chutney simmer for another 10 minutes.
