1/2 pint milk
1/2 pint single cream
1.1/2 pint chicken stock
few strands of saffron
200g ground almond
salt and white pepper
rind of 1 lemon
50g toasted almonds and pine nuts to garnish
in a pan add the rind of the lemon,saffron and the bay leaf to the milk and single cream, salt and white pepper bring to a boil then simmer for 5 mins.
in another pan melt the butter add the flour then gradually add chicken stock , cook till thickened...
once mixture has thickened remove from heat,slowly adding the milk mixture, and stir till creamy, adding the ground almonds and Stilton
place the pan back on heat and cook for a futher 10 mins , remove the lemon rind and serve with toasted almonds and pine nuts.
