Colorful and tasty. Serves 4
1 red onion minced
2 cloves of chopped garlic
1 red pepper seeded and finely chopped
4 salmon steaks, skinned and boned
1 glass of white wine
1 handful of chopped coriander leaves
60 cl of cream
1 full spoon of curry powder
Olive oil, salt and pepper
Start by rubbing the salmon with the lemon juice, olive oil and salt and pepper. Marinate for about 30 minutes.
Heat the oven to 200įC and cook the salmon until the top starts to crisp.
While the salmon is cooking, in a large pan with olive oil soften the onion. When almost done add the garlic and the pepper and fry for one minute. Turn the heat up, add the wine and allow to evaporate.
Bring the heat down, stir in the cream making sure it does not boil.
Add the curry powder, mix well and simmer for about 3 minutes. Incorporate the coriander and voilŗ.
Serve the salmon with a hefty spoonful of curry cream and Basmati rice.
