A creamy Aegean islands soup with fresh fishes full of vitamins ......
Ingredients
4 serves
2 codfishes medium size
12 jumbo shrimps
2 monkfishes medium size
2 potatoes, peeled and chopped in four pieces
1 carrot peeled and chopped
A medium size celery chopped in tiny pieces
The juice of I lemon
½ cup of extra virgin olive oil
1 big onion chopped
1 tea sp salt
¼ tea sp pepper
½ glass of wine
Method
Wash the fishes seasoned them. Marinate them with lemon juice and set them aside for an hour.
Put all the veggies and the salt in a deep casserole and add olive oil. Saute them for 10 minutes in very slow fire and then add the wine. Add 4 glasses of water and let them food cooked in slow fire for 30 minutes.
Then drain the broth and keep the cooked veggies aside.
Put the broth in a casserole and add the fishes inside. Cook them gently in real slow food for 15-20 minutes(depends on how big are the fishes).Add the shrimps the last 3 minutes.
After you have cook the fishes pick them from the casserole and set them aside.
With a multi chopper mass the veggies, till they turn a nice soft multi color puree.
Add the puree in the casserole with the broth, and cook for 5 minutes….
Your soup is ready to be served. Serve with pieces of parsley and some lemon juice…..
