A healthy breakfast recipe. Creeps filled with sofrito-scrambled eggs.
Ingredients
Filling:
1 tbsp olive oil
6 tbsp sofrito (sauce made with garlic, onion and tomatoes) can use thick salsa instead
3 large eggs
1/4 tsp salt
2 tbsp chopped cilantro
Creeps
1 tbsp olive oil
1 egg
1/8 cup milk
1/4 cup whole wheat flour
1 tsp sugar
1/4 tsp salt
Method
In a frying pan add olive oil. break open 3 eggs in oil and add sofrito, mix the ingredients together to make scrambled eggs. Just before taking it off the pan add cilantro and salt. Set aside
Beat eggs and milk together. Add a little salt and 1 tsp sugar and in the end beat the flour to make a thick batter. this should not be too thin nor too thick, just enough to make a thin crisp creep on the pan. Heat frying pan, add oil and spread the batter into a round thin creep. Cook for a minute and reverse for another 1/2 minute.
Fill the filling, squeeze some lime juice and serve warm for a filling breakfast.
