this italian dessert tastes light and creamy lemon zest gives a fresh aroma and amarettinis are super-tasty
Ingredients
4 egg yolks
4 heaped teaspoons caster sugar
grated zest of 1 lemon
4 heaped teaspoons potato flour (not cornflour!)
0,5 lt milk
a handful of amarettini biscuits
some orange-flavored liqueur or amaretto
Method
place the egg yolks and sugar in a sauce pan and whisk together until it looks like a light yellow foam
add potato flour and lemon zest
bring mixture just to a boil over medium heat, stirring constantly while adding milk bit by bit
then cook it for another 4 minutes over low heat
stir until it cools down
place the biscuits in little cups
sprinkle some liqueur over the biscuits
pour down the pudding over the biscuits and let it cool down in the fridge
* you can also use the amarettis (bigger biscuits) and crush them lightly
