Creole Chicken

Creole Chicken

Best served with crispy potatoes with a tbsp of duck fat in them instead of oil and a nice fresh salad, no cauliflower for me!

Ingredients
For the creole seasoning:
2 tbsp of ground rice (optional)
2 tbsp of plain flour (gluten-free works just as well!)
2 tbsp of ground black pepper
1 tbsp of salt
1 tbsp of garlic powder
1 tbsp of paprika
2 tsp of ground oregano
2 tsp of chilli powder (optional)

Chicken:
4 chicken breasts (moister when thick)
Oil (I reccomend rice bran or olive oil, for us NZ\'ers, Pams olive oil is the cheapest and best as voted by Consumer magazine aversed to that poncy rubbish, \"organic\", etc.

Method
Put the pan (the special one that is safe to use in microwaves) in your high-quality microwave oven and heat for 4 mins until screaming hot! Put a good amount of creole on the chicken and rub, then put on pan. If you\'re cooking 4 then cook for about 8 mins per side on crisp. When you take your breasts out, isert a knife into the thickest part of the chicken to ensure that it is cooked. And that\'s all you do!
