Ingredients
Basic Crepes (flavoured with vanilla)
1 cup of plain flour (my cup measures 250ml)
2 large eggs
1/2 cup milk
1/2 cup water
1 tsp vanilla flavouring
2tbsp melted butter
Berries:
500g frozen mixed berries
1/4 to 1/2 cup sugar
Method

1.Melt sugar in a saucepan then remove from the heat.
2.Add the frozen berries, place over a low heat till mixture is just warm and the berries start to defrost. Allow to sit in the saucepan for a few minutes till berries are completely defrosted (you don't want to cook the berries, just heat them a little in the sugar syrup).
3.Allow to cool and serve over hot crepes, sprinkling with icing sugar.
Crepes:
1. In a large bowl, whisk together the eggs, milk and water.
2. Add the flour, bit by bit.
3. When the batter is nice and smooth, add the melted butter and vanilla flavouring (you may need to add a little more milk/water, depending on your flour, but the batter should be quite thin)
4. When ready to cook, heat a lightly oiled crepe pan(or large frying pan) and fry the crepes on both sides till lightly browned (use about 1/3 cup for each crepe).
To keep them warm, stack on top of each other and cover with foil. Keep warm in a low oven.
