  • For pastry:
  • 1 1/2 cup all purpose flour
  • 1 1/2 cups plantain flour (Available from Cuban Cuisine UK and Mexgrocer.co.uk)
  • 2 teaspoons sugar
  • 1/2 stick butter (4 tablespoons)
  • 2 egg yolks
  • 1 beaten egg
  • 1 tablespoon white vinegar
  • For Filling:
  • 1 tablespoon yellow mustard
  • 1/2 pound (227 g) sweet cooked ham
  • 1/2 pound (227 g) sliced pork
  • 1/2 pound (227 g) sliced chicken breast
  • 1/2 pound (227 g) swiss cheese
  • 1/2 cup sliced sweet pickles.
For pastry:

Put dry ingredients in food processor and pulse for a few seconds to blend well.

Add in the butter, blending into the flour mixture until it has a crumble appearance. sprinkle egg yolks and vinegar over dough and blend in with fork.

Now place dough in a bowl or plastic wrap and chill for a few minutes.

To assemble pie:

Separate dough in half and roll out half the pastry.

Place rolled out dough in pie pan.

Spread mustard over the bottom of the pie.

Now layer ham, pork, chicken breast, swiss cheese and pickle

Roll out remaining dough and use it to top the pie.

Cut slits at the top of the pie, brush with optional egg wash, and bake at 350 degrees F or 176 Celsius for about an hour.
