  • 2 large chopped onions
  • 1 cup white vinegar
  • 3 minced garlic cloves
  • 1 teaspoon Goya Sazonador Total (Available through Cuban Cuisine UK and Mexgrocer.co.uk)
  • 4 tablespoons plantain flour (Available through Cuban Cuisine UK and Mexgrocer.co.uk)
  • 2 cups chicken consomme'
  • grated nutmeg to tast
  • 1 grated cucumber
Cook chopped onions in vinegar for 2- 3 minutes.

Add in garlic and spices to taste.

Stir in the flour, cooking it for a minute, the pour in the chicken consomme' and cucumber.

Cook, stirring for another minute then turn into a puree in a food processor.

Taste and adjust seasoning with salt and pepper.

Refrigerate covered for at least one hour before serving.

This zingy vinaigrette sauce is perfect served over root vegetables.

Method
