  • 1 med. cucumber, thinly sliced (peel or leave skin on)
  • Dressing:
  • 2 tbsp mayonnaise
  • 1 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 heaped tsp sweet mustard
  • 1 shallot, finely chopped
  • approx. 3 tbsp chopped dill
  • 1 small clove of garlic, finely chopped
  • Salt, pepper and a pinch of dried chilli flakes to season (optional)
1. Place all of the dressing ingredients in a salad bowl .
2. Mix well, then add the thinly sliced cucumber. Toss together then place in the fridge for about 10mins to allow flavours to mingle. Serve ASAP.

Note: The longer this salad stays in the fridge, the runnier the salad dressing will become. If you want to store the salad for longer periods i suggest that you salt the sliced cucumbers before adding them to the salad dressing (sprinkle with salt, allow excess water to drain off, rinse , then pat dry),

Thinly sliced cucumber in a creamy dill dressing, lovely served with grilled/steamed fish.

Method


1. Place all of the dressing ingredients in a salad bowl .
2. Mix well, then add the thinly sliced cucumber. Toss together then place in the fridge for about 10mins to allow flavours to mingle. Serve ASAP.
