For me it´s the best thing to do with currants, a lovely sweet and sour combination. :)
Ingredients
175 g soft butter
150 g caster sugar
1 P• vanilla sugar
1 pinch of salt
4 egg yolks
150 g plain wheat flour
100 g full spelt flour
(or a total of 250 g plain wheat flour, if you don´t like wholemeal flour)
8 g baking powder
4 tbsp milk
4 egg whites
200 g icing sugar
750 g red currants (or black or white currants)
small handful of pine nuts
Method
.Preheat your oven to 180ºC/350ºF/gas 4
.Get a baking tray roughly 30 x 30cm in size
.Butter the tray or use baking paper (I recommend the latter)
.Beat butter, sugar, vanilla sugar, salt, and egg yolks until smooth
.Mix flours and baking powder
.Add alternating a bit of the flour and a spoonful of milk until finished
.Put the batter into the baking tray and spread evenly
.Beat the egg whites until really stiff and slowly add the icing sugar
.Carefully fold under the currants and spread evenly on top
.Sprinkle some pine nuts on top of the cake
.Pop into the oven and bake for about 30 minutes
.Be careful in the end - don´t let the pine nuts get to dark.

This is actually a traditional german, swabian recipe! Love it!
