Ingredients
1/2 cup fat free sour cream
1 tablespoon Homemade Gourmet® Mock Spinach Seasoning (www.shophomemadegourmet.com)
6 slices thin whole wheat bread, lightly toasted
2 cucumbers, sliced thin
1/4 medium red onion, sliced thin
2 7-ounce bags cooked salad shrimp, thawed, rinsed, patted dry with paper towels
Method
1. Place oven rack 6 inches from broiler element. Preheat to broil.
2. In a small bowl, stir together shrimp, sour cream, and dill seasoning.
3. Place bread on broiler pan/baking pan; top each slice with 4 cucumber slices and one quarter of the onion.
4. Top each with 1/4 cup shrimp mixture. Broil until warm, do not brown, about 2-3 minutes.
