This recipe is one of the easiest you can find. You do not even have to cook. Buy a pre-cooked roasted chicken and cut it up if you do not want to poach a breast. If you poach add some herbs to the water, then strain and freeze for lovely homemade stock. This is fantastic for those sensitive or avoiding, dairy, wheat, gluten, soy and nuts...it is good and good for you and ... DELICIOUS!
1lb Poached Chicken (1 ¾-2 cups diced)
2 cups Zucchini ¼ “dice
¾ cup Parsley or Watercress chopped
3-4 Scallions chopped
1 cup Green grapes sliced in halp
1TB Dijon mustard
¼ tsp Sea salt
1/8 tsp Black Pepper
Mix all of the ingredients in a bowl making sure to coat the everything evenly.
