Dungeness Crab Cakes

Dungeness Crab Cakes

Ingredients
1lb crab meat

1 egg

1 cup bread crumbs

1 tsp fresh lemon juice

1 tsp dijon mustard

1 tbsp finely chopped green onion (scallions)

1/4 cup mayonnaise

1 tsp Worchestershire Sauce

1/2 tsp salt

1 tsp Old Bay Seasoning

1/4 tsp pepper

1 tbsp butter and 2 tbsp oil

Method
Fold together all ingredients, form into 2 inch round cakes similar to hamburger patties and if you wish some extra Panko japanese breadcrumbs on the outside. Refrigerate for 30 minutes and then heat oil and butter on medium heat. Cook crab cakes until golden on both sides then place on a baking sheet in a 350 degrees oven until cooked through. (approximately 15 minutes) Serve on a bed of lightly dressed greens and pass the following sauce around to put a spoonful onto the crab cakes: 1 cup mayonnaise and 2 tsp of Sambal Oelek (chile sauce)(adjust Sambal Oelek to your desired amount of heat) Enjoy!
